In this, the first episode of his Charcoal Kitchen series, he kicks things off with a cheer to Christmas in the 1-hour special, Darren Robertson’s Charcoal Kitchen Christmas – but it’s a very different Christmas to the ones he knew growing up in England. Now, he’s embracing the warmer weather and adapting his festive menu for a warm climate with a more relaxed, outdoor atmosphere. So while Darren still cooks a proper Christmas feast for a gathering of family and friends – he puts a spin on the more traditional elements like turkey and pudding and does it on a selection of outdoor stoves, including a gas barbie and an Indian fire pot. With a little help from cheffy mates Mike Eggert from Pinbone and Shannon Debreceny from Three Blue Ducks, Darren serves up succulent slow cooked turkey legs, veggies roasted in paper bark and baked apples stuffed with a fragrant spiced crumble.
