This week on Kurt Fearnley’s One Plus One the guest is chef Josh Niland.

In Josh Niland’s seafood restaurant nothing goes to waste – serving diners chips made from eyeballs, and caramel slices made from fish fat. The celebrated chef shows Kurt Fearnley around the kitchen, and chats to him about sustainability, surviving childhood cancer, and winning the prestigious James Beard Book of the Year.

  1. He’s such a great host for this. Mature,kind and very watchable.Glad he’s been given this gig he seems the perfect host ,his humble likeable quality reminds me a bit of Ahn Do and Julie Zamero where people are willing to share a bit more .It’s a skill not many interviewers have.
