With just three weeks before they serve their first ever Australian diners, the team must settle into their home and welcome and train new staff. Being in an unfamiliar environment, and with an unfinished kitchen and restaurant build, stresses and strains in the lead up to opening take their toll. For Heston, things don’t go to plan as he announces an online ticket ballot only for scalpers to run off with hundreds of prized seats.
